Tasting Notes: Dark Chocolate | Toasted Marshmallow | Apple Juice This dry-process coffee from Mexico is decaffeinated using the Ethyl Acetate (EA) or “Natural” Decaffeination Process. Ethyl Acetate is a naturally occurring compound found in many vegetables & fruits. For coffee decaffeination, EA is derived from fermented sugar cane (EA is also present in the coffee cherry itself and some coffee farms are even repurposing their cherries to be used in this process!) and is then used to remove the caffeine from the green coffee during the washing process. This coffee is great on drip, manual brew methods, or espresso, and is soft & sweet with juicy red apple & slightly charred marshmallow upfront and dark chocolate bittersweetness in the finish. Built on a base of a Natural Brazil, a Washed Central America, and a Natural East African. This is a Medium-Dark blend that is delicious on its own but also holds up very well to milk. Red fruit sweetness (think dark sweet cherries), fudgey, syrupy, lightly acidic. Smooth & rich. Yes this is labeled an espresso blend but it can absolutely be brewed via other methods! It would make a solid daily coffee for those who like a bit more body and lower acidity. Served well by an auto-drip pot or French press. Tasting Notes: Strawberry | Blueberry | Juicy This dry-process coffee from smallholders in the Guji Zone of Ethiopia is a clear example of what we love about Ethiopia naturals: intensely fruity, sweet, bright, and delicate. The ground coffee is very aromatic smelling of fresh fruit & florals; upon drinking you are immediately hit with the strong aroma & flavor of fresh strawberry, which transitions to blueberry juice, finally settling into a slightly earthy sweetness of dried blueberries & cherries. This coffee brews well on an auto-drip pot but shines on pour-over methods like the V60, Kalita Wave, and especially the Chemex where its deep fruit flavors really come through! Recommended brewing ratio: 1:17 Recommended resting period after roast date: 5-7 days

When ground this coffee has an aroma of dried red berries and chocolate wafers. Initially the cup offers up bittersweet cocoa from the roast intensity, which then gives way to a delicious and creamy body like chocolate malt. Deep blackberry notes persist throughout with muted acidity and earthy sweetness. Burundi Masha does well with a standard auto drip or french press, but also is served well by pour-over methods. A blend of South American and East African coffees. A Medium Roast blend with notes of milk chocolate, walnuts, and mild citrus acidity. A well-rounded, “anytime coffee”. Great for auto drip and manual brew methods like V60 or Chemex. Recommended brewing ratio of 1:15.5 Recommended Resting Period: 4-5 days after roasting

Tasting Notes: Almond | Mandarin Orange | Milk Chocolate This wet-process coffee from Nicaragua offers up a clean cup with a classic Central America profile: mild acidity, nuttiness, milk chocolate, citrus fruit sweetness. As the coffee cools the sweetness becomes more pronounced and develops into more of a fruit syrup. This is a versatile coffee that will do well on any brew method, but particularly shines on a V60 or Chemex. Recommended Brewing Ratio: 1:16 Recommended resting period after roast date: 5 days
